PATHOGENS BACTERIA ISOLATED FROM MEAT AND MEAT-PRODUCTS

摘要
The results of the bacteriological analysis performed on 369 samples of meat and meat products are shown. Different kinds of products were analyzed; particularly the Authors paid attention to those products that appeared more suitable as carriers of potentially pathogenic bacteria, owing to their characteristics, processing, conservation, commercial distribution or consumption. 47 strains of Listeria monocutogenes, 39 of Salmonella, 12 of Staphylococcus aureus and finally 9 strains of Yersinia enterocolitica were isolated. Listeria monocytogenes is the major contaminant of bovine meat, while Salmonella is the major contaminant of pork meat. The research shows that the ''microbiological indicators'' are not suitable to detect the psicrophylic pathogens.
