摘要
No refrigeration agent is as versatile and easy to use as the cryogenic liquid gases nitrogen (N2) and carbonic acid (CO2). These two gases behave neutrally towards food and can therefore be used in a number of ways, without misgivings, for chilling and freezing and as protective gases in packaging. A few examples of their use for refrigeration purposes in meat processing factories are given.
