摘要
In this short review the more recent analytical methods described in the literature, for anti-nutritional factors (ANFs) in legume seeds are discussed. Traditional methods are also sometimes included, particularly, when they are still widely used. Brief descriptions and the main properties of these non-nutrient components are given. The ANFs reviewed are lectins, trypsin inhibitors, tannins, antigenic proteins, alkaloids, phytic acid and alpha-galactosides.
