摘要
Chemical properties of vegetable oils are discussed and FTIR spectrophotometry with ATR is presented as a technique for the characterization of rapeseed oil. The given data describe qualitative and quantitative changes in the chemical composition of rapeseed oil and oxidized rapeseed oil (oxidation conditions: 125-170 degrees C, O-2 flow rate 135 l.h(-1)).
