Economic analysis of nutritional value of main fruits and vegetables and the prices of nutrients in Taiwan

In recent years, the problems that Chinese people suffered in addition to the accidental injury, the rest of the cause of death, such as cancer, cerebrovascular disease, heart disease, diabetes and so on, all have close relationship with the nutritional status (the department of health, 2013). Therefore, now we using the theory of "product characteristics" to explore the market value of the regular consumption of fruits and vegetables and nutritional value of the difference, and then estimate the marginal implicit price of nutrients, has its necessity. Based on the 2012 cross-sectional data for empirical data of Taiwan's main vegetables and fruits, using semilog hedonic price function regression to estimate, the results are as follows: 1. The views based on nutrients, the market prices of strawberry, loquat, peach, and other products (including 30 items) are on the high side; And products such as orange, onion and big mustard (including 32 items) are on the low side. 2. The prices of various nutrients, the estimated result is as follows: crude fat is 0.788 yuan per g, sugar is 0.2295 yuan, fiber is 0.5993 yuan, vitamin is 0.015 yuan, crude protein is -1.1608 yuan, mineral is 7.4625 yuan.
