摘要
An investigation of sucrose hydrolysis by three species of thermophilic bacteria in beet diffusion showed that B. subtilis and B. pumilus had an extracellular saccharolytic activity while B. stearothermophilus also had a significant endocellular activity. The activitY was always greater in diffusion juice than in a M.A. medium, and increased in the presence of formalin at a concentration sufficient to inhibit bacterial activity or to kill bacteria.
