High moisture com treated with potassium sorbate and potassium sorbate plus propylene glycol had a significantly longer safe storage period than untreated samples. Untreated corn showed a greater percentage of mold infected kernels, while a lesser percentage of infection was found in samples treated with the higher chemical levels. The predominant molds found to infect the stored com were Penicillium, Aspergillus, Fusarium, and Cladosporium. The addition of aeration significantly inhibited mold growth and extended the safe storage period of the high moisture com. Aerated com with 28% moisture content and treated with 1.5 and 2.5% potassium sorbate and potassium sorbate plus propylene glycol showed no mold infection. The aerated corn samples treated at higher chemical levels were mold free even after 40 days incubation on agar following 193 days in storage. Mold growth, however, was found in com with pH values less than 6.0.
