摘要
In countries with high agricultural production costs, market shares can only be maintained in the future if meat quality is commensurate with higher prices. Multifarious efforts are being made to ensure that this is the case. More attention should be paid to postmortal maturation processes. This paper reviews the fundamentals of muscle physiology and its significance for meat quality. In particular, the effects of temperature on these processes are described.
