Evaluation of purchase intention in Minas artisanal cheese from Campo das Vertentes region

摘要
The Minas artisanal cheese (MAC) production is a family activity in various region officially recognized as producers in Minas Gerais state, including "Campo das Vertentes" region. The objective of this experiment was to apply to consumer attitude test to verify purchase intention of Minas artisanal cheese from that region, during dry and wet periods, at 10, 20 and 30 days of ripening, from four production units, using three replications. The aging did not influence the action of the consumer, except for producer 3, where the intention is greater at 10 days. The periods of the year have a direct influence on purchase intention of consumers who prefer to purchase the MAC in rainy, except for the third producer, who has not had their cheeses as differentiated this question. The production process of dairies varies greatly in purchase intent of consumers between the dry and rainy seasons.
