摘要
The composition of the free amino acid pool and that of total grain protein of five rye (Secale cereale L.) inbred lines with normal protein content and of five rye inbred lines with high protein content were compared. No significant differences were found in the composition of grain proteins. The kernels of high protein lines were characterized by 2-3 times higher content of free amino acids. The free amino acid pool was characterized by increased content of glutamine and asparagine (1.5 and 5 times, respectively) and a decreased level of glutamic acid (1.5 times). Some aspects of the importance of asparagine metabolism in high protein varieties of cereals are discussed.
