Study of phase difference and resonance methods for longitudinal vibration and the phase difference method for the shear mode showed that the dynamic moduli of clear homogeneous hydrocolloid gels were independent of frequency. However, those of heterogeneous gels including solid particles, such as agargelatin mixed gel or shiratama mochi and concentrated waxy corn starch gel, showed complex behavior with a flat line below 10 Hz and an inclining curve over a range of 100 Hz. The characteristic frequency dependence of the modulus was not caused by the characteristics or resonances of the experimental apparatus, but by the heterogeneous structure of the gel dispersed particles.
