摘要
Temperature dependence of excessive heat capacity in the range of melting of gelatin aqueous gels has been studied by DSC method in the 2-95% gelatin concentration range. The samples with various amounts of interchain crosslinks were used. In the course of gelation the methastable collagen-like structures were formed. Temperatures and heats of melting were determined for gels formed in various conditions. Thermodynamic parameters of gelatin gels melting and of collagen denaturation were compared. The difference in these parameters can be used to evaluate the defectness of collagenlike structures formed in gels.
