Effect of modified atmosphere packaging on quality of minimally processed vegetables

摘要
The Objective of this study is to extend quality and shelf life of minimally processed head lettuce, common bean and carrot. These vegetables were packed using different packaging. The results showed that the best quality was realised when packed in polyethylene bag with nitrogen gas added. This resulted in an increased shelf life. The benefit of adding nitrogen gas was higher at 5degreesC than at 25degreesC.
