Health and environmental issues have become a rapidly growing source of international concern as our understanding of the impact human activity on natural resources improves and the effects themselves become more pronounced. The side effects of the industrial model of agriculture made sustainability a key word in the discussion on the future of agriculture and the food industry. Organic farming provides foodstuffs produced using agricultural methods and processes that are considered ecologically sound. Sugar, for the time being, is only a sideline commodity in the fast growing world market of organic products. However, taking into account a rapid expansion of the latter on the one hand, and an overall importance of sugar (particularly in the form of sugar containing products) in the human diet on the other, one may suggest that its niche in the market of organic products will experience steady growth in future.
