Sucrose and isomaltulose: two examples of sugars for the synthesis of functional derivatives and synthons for fine chemistry Some fundamental aspects of the use of carbohydrates as raw materials for chemistry are discussed in this paper taking sucrose and isomaltulose, two very available disaccharides, as examples.
