Simulation of the process of production of beer to scale pilot

摘要
The present work was carried out in the Pilot Plant of the Camaguey University in the line of production of beer. In the same have been carried out diverse investigative works relating to this process, which have been characterized by the realization of experiments starting from the theoretical knowledge or results published in the consulted bibliography. In any case it has been used the simulation as way to approach to the solution of the problems, therefore, pose as general objective of the investigation: to simulate the process of obtaining of beer for the analysis of the influence of the main operation variables that make that the process is more efficient from the technical and economic and environmentally sustainable point of view. To give solution to this thematic, was created a computer tool developed in SuperPro Designer, where two technological variants were analyzed taking as reference the process of current production in the plant. The first variant intends to carry out the fermentation at the temperature of 8 degrees C and the second intend to increase the concentration of initial substrate in the reactor to 120 g/L. Is obtained the better results in the technological variant 1, with production of 5 846 L/year, cost of annual operation of 22 446 $/year, unitary cost of 3,84 $/L, and with favorable results of the environment analysis.
