Sensory characteristic of cucumber fruits (Cucumis sativus L.) with thaumatin gene

摘要
The aim of the experiment was to compare the sensory traits of cucumber fruits of cultivar Borszczagowski and of a transgenic cucumber line with thaumatin gene. The sensory analysis concerned attributes as: exterior appearance of the fruits, flesh colour, flesh firmness, fresh smell of the fruit, flesh juiciness, taste (sweet, bitter, off-taste) and overall assessment. The fruits of the transgenic line were characterised by a sweeter taste, a higher firmness of flesh and a higher overall quality, as well as a less bitter taste and less off-taste.
