摘要
In terms of optical properties, most of the foods are turbid. The ability of light to penetrate a turbid material mainly depends on its absorption and scattering properties. Understanding the absorption and scattering properties of food is not only helpful to understand their chemical and physical properties, but also useful to optimize and develop effective devices for quality determination of food. To provide information for further studies on absorption and scattering properties of turbid food, the measurement techniques, such as integrating sphere, spatially resolved, frequency-domain, and time-resolved spectroscopes, and calculation algorithms, such as inverse adding double, Monte Carlo, and diffuse approximation, on obtaining absorption and scattering properties over the visible and near-infrared wavelength range were reviewed. The characteristics of these methods as well as the future trend on studying absorption and scattering properties of turbid food were also presented.
