Prevention of fumonisin production by microorganisms

摘要
A Fusarium moniliforme strain recently isolated from a corn meal feed was investigated for a mycotoxin production by ELISA method. The investigations showed negative reactions for T-2 toxin, zearalenone, deoxynivalenol and moniliformin as well as confirmed the production of fumonisins by this strain. To ascertain a possible prevention effect of microorganisms, the concentrations of fumonisins were subsequently investigated by quantitative Fumonisin test kit in control sample with F. moniliforme strain alone as well as in the other samples inoculated by Fusarium and after two weeks of its cultivation also with lactobacilli or yeast. Five strains of lactobacilli and one Saccharomyces cerevisiae strain were used in our experiments. The yeast strain was more effective in comparison with lactobacilli when fumonisins were not present in appurtenant experimental sample, however, each strain of Lactobacillus spp. also significantly (P < 0.001) prevented the fumonisins production.
