Peng-Robinson equation of state (PR-EOS) is adapted to calculate vapor-liquid equilibrium (VLE), solid-liquid equilibrium (SLE) and liquid phase density for industrial sugar juices using pseudocomponent approach. These juices were characterized by sucrose, invert sugar, amino acid and ash pseudocomponents in aqueous solution. The PR-EOS was used with conventional mixing rules introducing adjustable binary interaction parameters. The results showed that the PR-EOS produced a good estimation of VLE data for cane and beet sugar over a wide range of dry substances content. Introducing temperature and concentration dependant interaction parameter for the binary system amino acid-water, PR-EOS gives a good estimation of SLE data for beet sugar syrup over the range of purity studied (90-100 %). For liquid density, the model is able to describe this property for beet sugar juice accurately.
