High quality beef under extensive and intensive production conditions

摘要
The work deals with the influence of the energy concentration of the feeding ratio on the carcass composition and meat quality of different cattle breeds and categories. Due to the high influence of the feeding intensity and the lower external imput in the ecological farming only heifers and steers and small and middle framed genotypes in general should be used for beef production. The larger framed cattle are less suitable for the production of high quality beef because of their high energy requirements, which normally makes an additional administration of concentrates necessary originating from outside the farm.
