Construction of autolysogenic Saccharomyces cerevisiae strains for oenological purposes

摘要
In Saccharomyces cerevisiae autolysogeny is the ability to autolyse quickly even at low temperatures (from 5 to 25 degrees C). The present study investigates the compatibility of this characteristic with other oenological traits - namely flocculation and non production of H2S. Using breeding by conjugation between spores? the following types of strains were constructed: 1) autolysing and flocculating; 2) autolysing and H2S negative; 3) autolysing, flocculating and H2S negative. In the constructed strains, the ability to autolyse was not as evident as in the parental strains.
