Gastronomy as an Object of Research in Venezuela in the Midst of the Food Emergency

摘要
Gastronomy has attracted the interest of many specialists in the social sciences and communicators in the last decades in the West. In Venezuela, its study in a broader and more generalized way has been evidenced since the 1980s, corresponding to a period of consolidation of the middle classes, development of the public table in Caracas and other main cities, and growing interest from the media and from the public about food and cooking, especially traditional cuisine. But the economic crisis and the food emergency have shocked the diet, daily cooking and restaurants, posing unavoidable challenges for research.
