摘要
Amongst other responsibilities wort boiling is also used to remove undesired aroma compounds. Master component for the evaluation of a removal is dimethyl sulphide (DMS). The conventional boiling via direct firing has nearly entirely been replaced by flash evaporation systems. These offer advantages but the evaporation principle has a negative effect on the removal, too. By combining research and innovation, a system has been developed which allows benefiting from the advantages while avoiding the disadvantages: The Rectification Wort Boiling System which will be introduced by this article.
