The influence of the exogenous factors on the meat quality of fallow deer, roe deer and wild boars

摘要
In this study the meat quality of game of altogether 225 wild animals (fallow deer: 122, roe deer: 54, wild boars: 49) was examined. All the game were shot under hunting conditions. The characterization of the meat quality was done by determining the sensor marks of the animal's bodies, finding out the residual blood content in the diaphragm musculature by a haemoglobin diffusion test, the electro-metric pH value measuring as well as examining the water-binding capacity of meat by the filter paper press method in the M. semimembranosus. The influence of the endogenous factors on the examined quality parameters was partly to be seen in which however no anxious deviations in the meat hygiene from the normal composition of meat could be proved. The hunting method in which the game had been stressed before being shot (called "Ansitzdruckjagd") doesn't provide game of bad quality. This result is in contrast to the result of the surveys of farmed game. The shot which hits the thorax (Kammerschuss) should be advisable for hoofed game. The hunting method in which the game had been stronger stressed before being shot (called "Druckjagd") is to reject for roe deer.
