摘要
The report involves results of heavy metals (Pb, Cd, Hg, Zn, Cu, Ni), benzo(a)pyrene (BaP), polyclorinated biphenyls (PCB), organochlorine pesticids (PSM) and radio cesium in game samples of the biosphere reservation Schorfheide/Chorin. Samples of muscle, fat tissue, liver and kidney of altogether 65 pieces wild boar, red deer, roedeer, moufflon and fallow deer were investigated. The heavy metal contamination with cadmium was specially striking. Most of the values of all game sorts were clear above the guide values (ZEBS) of cattle kidney and swine kidney (0.5 mg/kg original substance). The consumption of the kidneys isn't recommended. Some of the liver samples of moufflon, roedeer and boar (4 of 55 samples) exceeded the guide value (0.3 mg/kg original substance). Further the lead amount of boar samples (kidney, liver) and the mercury amount of roedeer samples (kidney) exceeded the guide values. The muscle samples haven't exceeded the guide values. In 51 of the examinated fat samples the BaP values were smaller then 0.5 mug/kg original substance and clear below the guide value of the meat hygiene order (1.0 mug/kg). The examination results of PSM and PCB showed no values above the guide values of the DDT law, the order of pesticides and of harmful substances. But the DDT amount of wild boar samples were clear above the values of the other game sorts. The examinated game was assessed unobjectionable regarding the use as food. The radio cesium amounts in 45 of 48 examinated game samples were below 600 Bq/kg fresh muscle mass (EG guide value). Only the wild boar exceeded the guide value in 3 of 18 samples (625, 898, 1348 Bq/kg).
