摘要
As a new millennium approaches, consumer expectations, demands, aspirations and concerns are more likely to expand than to recede. The job of food scientists, technologists and engineers is to provide solutions which not only make safe, high quality food available to all at affordable prices but to do so in a way that is not detrimental to the environment, that is sympathetic with the welfare of farmed animals and that provides sustainability of increasingly precious renewable resources.
