摘要
Background: Food safety is a common global challenge. It is necessary to develop the simple, effective, and green quality inspection technology and antibacterial preservation technique. As an effective means of preparing functional composite materials, electrostatic layer-by-layer (LBL) self-assembly technology provides the technical support for constructing food safety defense lines. The application of electrostatic LBL self-assembly technology in food quality inspection and antibacterial preservation has great advantages. It provides a reference direction for ensuring food safety. Scope and approach: In recent years, the modification of sensors and the preparation of active packaging have been become promising application directions of electrostatic LBL self-assembly technology. Therefore, this review mainly combs the functions of electrostatic LBL self-assembled modified sensors and active packaging, and their application effects in food from the aspects of food quality detection and antibacterial preservation. Conclusion: The electrostatic LBL self-assembly modification further improves the sensitivity, accuracy and stability of the sensor in food quality detection. In addition, the active packaging prepared by electrostatic deposition has excellent antibacterial preservation function, which can prolong the shelf life of food. This review provides the necessary theoretical basis for expanding the application of electrostatic LBL self-assembly technology in the food field.
