The preventive role of diet in stomach cancer

摘要
The epidemiological evidence show that diet plays important roles in preventing against major risk factors for stomach cancer (SC) in China. 1) The evidence that diets high in vegetables and fruits protect against SC is convincing. Vitamin C, contained in vegetables and fruits, is probably protective; 2) diets high in salt probably increase the risk; 3) diet high in allium compounds, tea and its polyphenols, and also the antioxidants such as the combination of selenium, carotenoids and vitamin E, possible reduce the risk. It is concluded that the most effect means of preventing SC is consumption of diet high in vegetables and fruits, and low in salt; and the use of refrigeration for perishable foods.
