Investigation of dielectric and rheological characteristics of water-oil emulsions

A study was conducted to investigate of dielectric and rheological characteristics of water-oil emulsions. The study measured the frequency dependences of the tangent of dielectric loss angle tanσ of emulsions by VM-560 and E4-11 meters for frequency range of 1-200 MHz and temperature of 293-373 K. The study found that value of the tangent of dielectric loss angle increases with the concentration of water in the emulsion. The study observed that the frequency maxima of tanσ shift to the region of lower frequencies with the increase of amount of water on oil region. The study also observed that an increasing interaction between droplets can cause an increase in the viscosity of emulsion with the concentration of water. The viscosity of emulsions decreases with the rise of temperature, while viscosity increases with increasing concentration of water.
