摘要
Determination of color in oil is an important measurement to predict quality and acceptability of edible oil. The aim of this study was to develop and optimize a fast, inexpensive, noninvasive and nondestructive in-line method for determination and control of color in sunflower oil. Based on visible and near-infrared light analysis, the in-line measurements of oil in the Lovibond scale were performed in an oil stream of 30 m(3)/h and verified by means of visual and automatic colorimeters.
