摘要
Polysaccharides from sugar beet are well known for their bioactive health-promoting properties and use in biobased products. Pectins extracted from pulp and modified by heating and treatment of pH value are active in preventing pathogenic bacterial adhesion and the occurrence of cancer cells. The combined effect of milk proteins (beta-LG) and beet pectin in new food supplements is also significant, with improved emulsification, nutritional value, texture and food stability. Applications of new bioproducts also include bioplastics and films based on beet pectin and biodegradable polylactic acid polymer. The results of theoretical and applied research into the use pectin from pulp resulting chiefly from a review of works and projects of the USDA-ARS and American universities, could be a guide for our research institutions and sugar industry on how to use the potential of pulp, in the current economically difficult times, of course in cooperation with the pharmaceutical industry or with plastics converters.
