摘要
Food safety is closely related to public health , food safety detection techniques are essential for monitoring food safety , assessing public health risks. Compared with the complicated and time-consuming traditional detection techniques, the emerging isothermal nucleic acid amplification techniques have shown great application potential for food safety detection because of their convenience, high specificity, high sensitivity and low cost. In this paper, several common isothermal nucleic acid amplification techniques were introduced. The recent research and application progress of different isothermal nucleic acid amplification techniques in food safety detection were summarized from the aspects of their principles and characteristics, and the development trend of isothermal nucleic acid amplification techniques in food safety detection was prospected. The aim was to provide reference for developing good performance and low-cost detection strategies in the field of food safety detection.
