摘要
The analytical concepts and quantitative methods of modern engineering should play increasingly important roles in future developments throughout the food industry. For this to come about expeditiously, hit-or-miss schemes for teaching food engineering subjects will have to give way to well-conceived, thoroughly planned programs aimed at meeting societal needs, the educational and professional needs of at least three student groups as well as the needs and expectations of a whole host of prospective employers. A curriculum is presented by the University of Massachusetts which is directed at preparing the undergraduate engineering student to practice his profession within the context of the overall food industry.
