Effects of different atmosphere compositions on physiological changes of Lingwu long jujube during storage

Physiological changes of Lingwu long jujube (Zizyphus jujuba Mill.) under different atmosphere storages, and the respiration characteristic of this jujube were studied. The results show that Lingwu long jujube belongs to respiratory climacteric fruit, and the treatment with 7% O2, 2% CO2 and 91% N2 concentration can significantly inhibit the activity of polygalacturonase (PG), peroxidase (POD) and polyphenol oxidase (PPO). It also alleviates the decrease rate of acid content and change of reducing sugar content, and preferably reserves vitamin C. The percent of hard fruit and accepted fruit are respectively 50.5% and 96.3% after 120 days' storage.
