Understanding the functionality of lipid-based materials under large-amplitude nonlinear deformations

摘要
Lipid-based materials meet many functions such as oil binding, lubricity and rheology. In this article, we focus on their rheological function, specifically in nonlinear viscoelastic properties, which we characterize using a novel approach known as large amplitude oscillatory shear (LAOS). We summarize recent works on this area and show that this technique has potential for providing invaluable insights into the functionality and perception of lipid-based materials during their application process. © 2017 WILEY-VCH Verlag GmbH & Co.
