摘要
Characterization of milk source is of dramatic importance to ensure the safety and authenticity of infant formula milk. In this study, capillary gel electrophoresis (CGE) method was applied to detect cow milk protein ingredient in goat milk from infant formula. Through comparison of the electrophoresis profiles of protein constituent from different milk source, cow milk specific protein peak was determined. Subsequent validation experiments and testing of commercial infant formula milk confirmed good performance of CGE method in terms of specificity, sensitivity and reproducibility. Area of the specific protein peak showed good linear correlation with the ratio of spiked cow milk to goat milk(R2>0.99)with a detection limit around 0.5%. These data proved that CGE method is promising in both qualitative and quantitative detection of cow milk in goat milk derived infant formula. © 2019, Editorial Office of Journal of CIFST.
