Optimization of fermentation conditions for peptides from waste jasmine flower and its anti-aging effect on H2O2-induced normal human dermal fibroblasts

摘要
In the process of refining jasmine essential oil, a significant amount of flower residue is produced, which contains valuable bioactive substances. However, this waste is not adequately utilized. This study aimed to ferment jasmine residue to extract low molecular peptides for the development of high -value products. A Box-Behnken design was used to optimize the fermentation conditions. The results revealed that an inoculation amount of 8.2 %, a fermentation temperature of 39 degrees C, and a fermentation time of 47.7 h produced the highest content of peptides, which increased by 39.2 % compared to the non -fermented samples. Subsequently, three peptides named JSFP 1 -1, JSFP 5 -1, and JSFP 5 -3 were purified using ion exchange resin and gel column chromatography and their amino acid sequences were determined using UPLC-QTOF-MS/MS. Furthermore, their anti -aging activity was investigated. The results indicated that the peptides promoted cell proliferation and COL -1 secretion, while significantly reducing SA- beta-gal expression, intracellular ROS level and MMP-1 secretion in the H 2 O 2 - induced human dermal fibroblast (HDF) cell senescence model. These findings suggest the potential of jasmine residue fermentation products as cosmetic raw materials with anti -aging properties and provide a solid theoretical foundation for their development in the cosmetic industry.
