In order to evaluate the anti-aging effect of strawberry (Fragaria × Ananassa) leaves water extract (SLWE), the composition, antioxidant activity and non-enzymatic glycation (NEG) inhibition rate of SLWE were measured. The effects of SLWE on cell viability and contents of hyaluronic acid (HA), human collagen type Ⅰ (COL Ⅰ), hydroxyproline (HYP), matrix metalloproteinase 1 (MMP-1) and matrix metalloproteinase 9 (MMP-9) of human foreskin fibroblasts (HFF-1) were discussed. Based on the UVB induced damage model of HFF-1, the effects of SLWE on reactive oxygen species (ROS), malondialdehyde (MDA), MMP-1 and superoxide dismutase (SOD) in the protection group were investigated, and the protective mechanism of SLWE on UVB-induced HFF-1 damage was explored. The results showed that SLWE was rich in VC, quercetin, chlorogenic acid, gallic acid and catechins, among which, quercetin and epicatechin contents were 12.86 mg/L and 10.13 mg/L respectively. SLWE had excellent free radical scavenging ability, the scavenging abilities of different free radicals were in order, O2-• > DPPH• > ABTS• > ferrous chelation > •OH. The NEG inhibition rate of volume fraction 1% SLWE aqueous solution was 87.17%.
