Food safety has always been a hot issue of social concern. In order to ensure food safety and human health, the detection of food contaminants is the key to controlling and eliminating the health risk caused by them. Therefore, it is of great significance to develop a sensitive and accurate assay for food contaminant detection. Metal-organic frameworks(MOFs) are a new class of porous crystal materials self-assembled by metal ions or metal clusters and organic ligands. The material has many advantages such as high porosity, large specific surface area, adjustable structure and various functions.MOFs can be combined with a variety of sample pretreatment and analytical techniques, making it a promising candidate for application in food safety analysis. This paper reviews the recent progress in the application of MOFs and MOF composite materials in food detection mainly as sensor materials and sample pretreatment materials for chromatography, and discusses their future applications in the field of food safety. © 2021, China Food Publishing Company.
