摘要
A study has been made of the effect of a magnetic field on the viscosity of pectin solutions with various concentrations. For solutions of high- and low-ester apple pectin, it was found-that the viscosity is increased by 10-12% with a field strength of 120-160 kA/m and an exposure time of 1.2-1.6 sec.
