摘要
The term ''total dietary fiber'' covers the majority of plant non-starch polysaccharides and lignin. They can be determined by means of enzymatic and gravimetric analysis. Total dietary fiber contents between 183 and 3535 mg/l beer were found in the beers examined. Malt drink, non-alcoholic beer, light, diet and protein beer contain under 1 g/l, Dinkel, Doppelbock, Weizen and smoked beers over 2 g/l dietary fiber, the other beers having an average dietary fiber content. Further studies are necessary before generally applicable statements are possible.
