摘要
Some factors affecting the formation of γ-cyclodextrin (γ-CD) from potato starch, using cyclodextrin glycosyltransferase from Bacillus sp. AL-6, were investigated. The yield of γ-CD was affected considerably by ethanol concentration and the buffer used. The yield of γ-CD increased up to an ethanol concentration of 30%. The maximum yield was 35% in 100 mM potassium phosphate buffer (pH 8.0) at an ethanol concentration of 30%. The reason for the increase in the γ-CD yield was considered to be that ethanol repressed the degradation of γ-CD, a process which may occur due to an intermolecular transylcosylation reaction between γ-CD and small dextrins formed from potato starch during the reaction. It was also found that γ-CD acted as an inhibitor toward the formation of γ-CD. © 1989.
