BIOAVAILABILITY OF MINERAL SUBSTANCES AND TRACE-ELEMENTS IN THE PRESENCE OF DIETARY FIBER

The bioavailability of the mineral substances und trace elements Ca, K, Mg, Mn, Cu, Fe, Zn and Co in the presence of the dietary fibre preparations pea bran, sugar-beet fibre and wheat bran, which shows different contents of soluble and insoluble dietary fibre, was studied in vitro by simulating gastrointestinal digestion. Furthermore, the binding capacity of the dietary fibre preparations in regard to the possibly with the diet consumed toxic heavy metals Pb and Cd was examined by analogous studies. The bioavailability of the mineral substances and trace elements was diminished to variable extents depending on the dietary fibre preparation, whereat wheat bran exerted the greatest effect. Comparatively, the bioavailability of the trace elements Zn and Fe was reduced most of all. The examined dietary fibre preparations showed throughout significant binding capacity towards the toxic heavy metals Pb and Cd which may be present in the diet.
