摘要
Well-designed and well-implemented instrumentation systems are playing an increasingly important role in food-processing management and quality assurance. This article examines instrumentation needs, particularly for the on-line measurement of both physical properties and chemical composition. Instrumentation and sensor technologies to meet these needs are highlighted. The role of developments in mathematical methods and software for instrument optimization and interpretation of the readings is also addressed.
