摘要
Food is a thread and conduit for culture throughout history. Using a historic perspective, we can examine how the middle passage slave trade, colonialism, the industrial revolution, and the resulting shift from rural to urban migrations have led to our current food system and current economy. Food is more than what we get at the grocery store; it has become an impetus for examining culture, class, and democracy. Museums have the opportunity to weave this story using multidisciplinary, interactive learning spaces where people explore food history timelines.
