摘要
In Quebec, over recent years, the wine sector has registered an important growth. However, this sector is still at the startup stage and faces several climatic and economic challenges, which limit its development and competitiveness. This context leads to multiple innovations. These innovations affect the technical and technological dimensions (choice of grape varieties, culture and winemaking process improvement), but also organizational and institutional dimensions (new modes of coordination of stakeholders, new rules and standards, new distribution channels, etc.). We studied the different types of innovation that structure the sector, but also, on the basis of the evolutionary theory of innovation, we show the role of sectorial and territorial stakeholders in these processes.
