Development of a Method for Obtaining Bromelain Associates with Chitosan Micro- and Nanoparticles

Micro- and nanoparticles of medium- and high-molecular-weight chitosan were synthesized without and with the addition of ascorbic acid. Associates of bromelain with chitosan micro- and nanoparticles were obtained. Bromelain associates with chitosan micro- and nanoparticles were more stable than the soluble enzyme. The proteolytic activity of the drug was observed to decrease during the seven days of the experiment. The catalytic activity of bromelain–chitosan associates synthesized with added ascorbic acid was higher than for chitosan particles of both types synthesized without ascorbic acid. The differences were 17 and 21% for micro-and nanoparticles, respectively, of medium-molecular-weight chitosan; 21 and 26% for micro- and nanoparticles, respectively, of high-molecular-weight chitosan.
