摘要
The quality of raw goat milk is investigated. A low quality of milk being delivered for industrial processing, especially with respect to protein and dry matter content related to adulteration and microbiological indices, is established. In connection with the use of valuable goat milk in products of children’s and therapeutic and prophylactic nutrition, strict quality control of milk at milk-processing enterprises and the creation of large goat farms with its primary processing are needed.
