SPME-GC-MS analysis of horseradish (Armoracia rusticana)

摘要
The presence of allyl isothiocyanate, isobutyl isothiocyanate, butyl isothiocyanate, 4-isothiocyanato-1-butene, 3-methylbutyl isothiocyanate, pentyl isothiocyanate, 4-methylpentyl isothiocyanate, benzyl isothiocyanate and 2-phenylethyl isothiocyanate were determined in horseradish immediately after harvesting by SPME-GC-MS. After storage of the sample at 5degreesC for 12 h the analysis showed that 2-phenylethyl isothiocyanate was the main compound. Other new compounds (aldehydes and terpenes) were also found.
